Here is a one skein project suitable for advanced beginners, I think. The yarn is a fun one from Red Heart, one that I haven't worked with yet myself! The cowl is very skinny and long, instead of the usual wide and short version. Because of this, you can double it around the neck and pull one end through for something interesting.
